Vegetable Polenta Bake for One (or Two)

Description

The perfect quick and easy dish that’s comforting yet healthy!

Ingredients

  • ½ Tablespoons Olive Oil
  • 1 whole Small Onion
  • ½ teaspoons Garlic, Minced
  • 1 whole Small Zucchini
  • 1 whole Small Yellow Squash
  • 1 cup Greens (i.e. Kale Or Chard), Chopped
  • 1 cup Pasta Sauce
  • 1 Tablespoon Fresh Chopped Parsley
  • ¼ cups Yellow Cornmeal
  • 1 cup Water
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Onion Powder
  • ½ teaspoons Salt
  • 1 ounce, weight Mozzarella (string Cheese Works)
  • 2 Tablespoons Parmesan, Grated

Preparation

Heat oil in a pan, add onion and cook for a few minutes (until translucent). Add garlic, zucchini and yellow squash and cook for a few minutes (it shouldn’t be cooked all the way). Next add greens and stir around until they start to wilt. Add pasta sauce and stir until greens have cooked down. Turn off the heat and stir in the parsley.

In a small pot or sauce pan, combine cornmeal, water, garlic powder, onion powder and salt. Bring to a boil, stirring occasionally. Once cornmeal starts to thicken (a.k.a. polenta), keep stirring until the polenta starts to come off the sides.

Take a small baking dish, spread half of the sauce/vegetable mixture in the baking dish, then on top of that spread half of the polenta. Next top with half the string cheese/mozzarella and half of the parmesan. Repeat.

Bake in the toaster oven for 20 minutes.

Allow to cool. Either eat it straight from the dish for another single lady (or gent) meal or serve on a plate with a simple green salad.

This was good, but it was a lot more like a casserole than it appeared in the photo… I second the more polenta comment! I would probably triple it next time. Mine remained runny and didn’t crisp up like it appears to have done in the photo.

I LOVED THIS! I made it for my husband and it was a perfect amount for the two of us. For the last two minutes I put it under the broiler to give it a crispy top. Great recipe :)

What a wonderful way to use seasonal produce! I thought this was delicious and the kids even partook in a small bowlful. My only comments would be that my came out runnier than the picture, but I did add more veggies, and it could use lots more polenta, so I would double or triple that part of the recipe next time.
