Description

This is the only meatloaf my mom made when I was growing up that I would eat. Since it’s made with turkey and spinach, and very little added fat, I convince myself that its healthy. We love this served with mashed sweet potatoes, mixed with a little Amaretto and brown sugar.

Ingredients

  • 1 whole Onion, Chopped
  • 2 cloves Garlic, Chopped
  • 1 Tablespoon Olive Oil
  • 2 whole Eggs
  • ½ cups Milk
  • ½ teaspoons Basil, Dried
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 10 ounces, weight Frozen Spinach, Thawed And Drained
  • 2 pounds Ground Turkey
  • 1-¼ cup Dry Bread Crumbs
  • 2 teaspoons Lemon Juice
  • ½ cups Ketchup
  • 2 Tablespoons Butter

Preparation

Preheat oven to 350. Butter a large baking pan.

Cook onion and garlic in oil until soft.

Whisk eggs with milk, basil, salt and pepper.

Add spinach, onion, turkey, bread crumbs and lemon juice to egg mixture. Mix well.

Turn the mixture out into a pan and form into 9×5 loaf.

Brush with ketchup and bake for 30 min.

Melt butter and baste loaf with butter and continue to bake, basting occasionally until well browned, another 30-35 minutes.
