Description

A delicious and healthy alternative to the standard beef burger. Great for a light fall cookout. Husband approved.

Ingredients

  • FOR THE PATTIES:
  • 1 pound Ground Turkey, Dark Meat
  • ½  Small Red Onion, Finely Diced
  • ½  Red Pepper, Finely Diced
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Liquid Smoke (optional)
  • ½ cups Panko Breadcrumbs
  • 1 teaspoon Salt, More To Taste
  • ½ teaspoons Pepper, More To Taste
  • ½ teaspoons Garlic Powder
  • 1 teaspoon Italian Seasoning
  • 1  Egg
  • FOR ASSEMBLY:
  • 1  Large Zucchini
  • 1 dash Salt
  • 4 slices Provolone Cheese
  • 4  Hamburger Buns
  • 2 Tablespoons Purchased Pesto
  • 1 cup Spinach, Or As Desired

Preparation

Preheat your grill.

Mix the patty ingredients together in a large bowl.

Fry up a small peice of the burger mixture and once it’s done, check to see if you need to adjust your seasonings. Form your turkey burger mixture into 4 equal-sized patties.

Slice zucchini into very thin strips lengthwise. Lightly salt the zucchini slices and let them sit on a paper towel to draw the water out.

Grill the burgers on medium heat for about 7-9 minutes on each side or until fully cooked. When the burgers are about 2 minutes away from being done, top with provolone and put the zucchini slices on the grill and cook for 1 minute on each side.

Place a patty on each bun, spread 1/2 a tablespoon of the pesto on each top bun. Top the patties with a slice of grilled zucchini and a small bunch of spinach. Enjoy!
