Description

Pasta in a creamy tomato sauce that’s simple enough for a weeknight, delicious enough for any night!

Ingredients

  • 1 whole Onion
  • 5 cloves Garlic
  • 1 Tablespoon Olive Oil
  • 2 pinches Salt To Taste
  • 1 pinch Pepper To Taste
  • 1 can (28 Oz. Size) Diced Tomatoes
  • 2 teaspoons Italian Seasoning
  • ⅓ cups Red Wine
  • 1 pound Spaghetti
  • 5 ounces, weight Mascarpone
  • 1 bunch Fresh Basil, Minced, To Serve
  • 1 cup Parmesan Curls, To Serve

Preparation

1. Dice the onion finely and mince the garlic.
2. Heat the oil in a large skillet over medium high heat. Add the onion and cook for 5-6 minutes, until softened, seasoning with salt and pepper.
3. Add the minced garlic and cook for 1-2 more minutes, stirring to make sure the garlic doesn’t burn.
4. Pour in the diced tomatoes and add the Italian seasoning, bring the sauce to a boil, then partially cover the pan (leaving a small opening on one side between the pan and the lid) and cook the sauce over medium low heat for 20 minutes.
5. Add the red wine and cook for 10 more minutes, with the pan still partially covered.
6. Cook the pasta in salted water until al dente.
7. Stir the mascarpone into the finished tomato sauce. Taste and adjust seasoning.
8. Stir the pasta into the sauce along with the basil, and top it with Parmesan curls to serve.

Easy AND delicious, my two favorite things!! ;) I used fresh tomatoes from my produce coop with great results. This is a very versatile dish! It’s definitely going into my recipe “must keep” file.

Delicious! Added chicken and some proscuitto to it at the end… just note that this make a lot of food!!!! I will def be making this again.

I made this for my family and they loved it. My husband even asked that I make it again this weekend and have friends down to enjoy. The sauce is delicious and it is so easy to make. A new family favorite for sure!

This recipe was delicious! I even messed up and had to use one can of crushed tomatoes and one diced, but it ended up superb. I also decided to alter the recipe slightly with the addition of Pancetta. Before adding the onions, cook the Pancetta in the oil, remove from the oil and set aside, and then cook onions in oil and follow recipe as is. When ready to serve, sprinkle the pancetta on top.
