This is not the grilled cheese you grew up eating.
Generously spread softened butter on one side of two slices of bread an arrange the bread butter sides up, on a work surface. Spread one tablespoon of fig jam on the other two slices of bread. Add two ounces of cheese on top of the jam and arrange three slices of prosciutto on top of the cheese. Place the buttered slices of bread on top of each sandwich, butter sides up.
Heat a heavy griddle or skillet over medium-high heat. Melt 1 tablespoon of butter in the pan. Place the sandwich in the pan and press down with a spatula. Cover the pan and cook for about 2 to 3 minutes. Turn over the sandwiches and cook the second side until golden brown and cheese has melted.
To serve, slice sandwiches in half on the diagonal, and serve warm with a bowl of creamy tomato soup.
