A recreation of one of the 30 grilled cheeses on the Pop Shop’s menu, who are famous for their Bobby Flay grilled cheese throwdown.
Combine mayonnaise, vinegar, and black pepper in a small dish. Set aside. Season chicken with salt and pepper and cook however you desire. I used my grill pan to cook mine. Let chicken rest and then slice into thin slices.
On your choice of bread, spread prepared mayo on both sides. Layer sun dried tomatoes, avocado, chicken, and finally the mozzarella. On a panini press or heated pan, heat sandwich until cheese is melted. You can also create a “dome” using a bowl or pot to help melt the cheese.
