Super yummy peanut noodles with chicken, bean sprouts and carrots.
In a small bowl, whisk together peanut butter, honey, soy sauce, chili garlic paste and rice vinegar. Set aside.
Prepare pasta to al dente, drain and toss with 3 tablespoons sesame oil in a large bowl. Set aside.
Cut chicken into thin slices. In a hot pan, heat 1 tablespoon sesame oil and cook chicken completely. Remove chicken from the pan.
Heat remaining 1 tablespoon of sesame oil and cook 8 of the chopped green onions, garlic and ginger until softened. Pour in the sauce and simmer for about 1 minute on medium-low heat.
Toss sauce, pasta, chicken, carrots and mung beans together until well combined. Garnish with remaining green onions and serve.
You can also garnish this with a handful of peanuts.

We’ve made this a few times. Same problem finding paste. Just ended up subbing in some sweet chili sauce (quite a bit actually). Adds a good spice and an extra bit of sweetness. Usually go a little heavy with the ginger as well. Thanks for the recipe!

I found mine at my local asian market. It’s still not terribly spicy, but it has a nice heat. If you can’t find the paste or if you still want to spice it up, buy some dried asian chilis and toss them with the hot pasta. The actually chili isn’t edible, but it sure does pack a punch.

I tried this tonight. It was okay. I think I needed to find the paste. There was almost no spice to it. Two of my four girls ate it, but did not want seconds. Husband thought it was good. Thanks for a good recipe. If you could let me know where I can find the paste, I would definitely try this one again.
