Description

For those days where you want something sinfully delicious.

Ingredients

  • 2 pounds Ground Beef
  • 2 whole Medium Onions, Chopped
  • 1 whole Green Pepper, Chopped
  • 1-½ teaspoon Ground Cumin
  • 1-½ teaspoon Chili Powder
  • 1 package Fajita Seasoning Mix
  • ½ cups Sour Cream
  • 1 bar Cream Cheese
  • 1 cup Cheddar Cheese, Grated
  • 1 cup Mozzarella Cheese, Grated
  • ¼ cups Sliced Black Olives

Preparation

Directions:

1. Preheat oven to 350 F.

2. In a big frying pan, brown the ground beef, onions and peppers until meat is cooked through and veggies are soft. Add cumin, chili powder and fajita mix and stir. Add sour cream and cream cheese and mix well. Turn off heat and set aside.

3. Cut each tortilla into 3 equal slices (not wedges).

4. Cover bottom of a 9″x13″ casserole with a thin layer of salsa.

5. Make a layer of tortillas so that the entire bottom is covered, then cover again with more tortilla (3 tortillas total).

6. Top with half of beef mixture and then with some grated mozzarella (like you would top a lasagna).

7. Repeat the layer of tortillas with the remaining tortilla pieces.

8. Add the rest of the beef mixture.

9. Top with a mix of grated cheddar and mozzarella (or any other good melting cheese of your choice).

10. Top with sliced black olives.

11. Bake in preheated oven for 30 minutes.

12. Let sit for 10 minutes, then cut and serve.

13. Top with your choice of toppings: diced green onion, diced tomatoes, sour cream, salsa, sliced black olives, jalapeño peppers, etc.
