Description

This recipe came together one night when I had no idea what I was going to make for dinner. The combination of the sweet sausage and potatoes with the vinegar was a huge hit with me and my husband, and the spinach was a great way to get an extra serving of my green veggies in without extra work on a side dish.

Ingredients

  • 2  Large Sweet Potatoes, Diced
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1  Medium Onion, Diced
  • 1 pound Pre-Cooked Sausage, Diced (I Used An Apple/chicken Blend)
  • 1 bunch Spinach, Chopped
  • ¼ cups Chicken Broth
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Crushed Red Pepper Flakes
  • Salt And Pepper
  • Red Wine Vinegar, To Taste

Preparation

Put the sweet potatoes, butter and olive oil in a large pan over medium heat and cook until the potatoes soften a bit, about 7-10 minutes. Season with salt and pepper to taste.

Add the onion and saute for another 2-3 minutes. Add the sausage and keep stirring for another 2 minutes.

Then add the chopped spinach and chicken broth to it and carefully mix the hash together until the spinach is wilted and everything is hot, another 5 minutes.

Add the garlic powder and red pepper flakes, as well as a few dashes of red wine vinegar to your own taste.
