Description

Easy five ingredient tortillas. A sweet hot mix that is yummy.

Ingredients

  • 4 cups Shredded Chicken
  • 1 envelope (1 Oz. Size) Taco Seasoning
  • 1 jar (15 Oz. Size) Salsa
  • 1 jar (12 Oz. Size) Peach Preserves
  • 8 whole 8 Inch Flour Tortillas
  • 1 Tablespoon Oil

Preparation

Prepare shredded chicken in the way that you prefer. (The prep time on this is only about 5–0 minutes for me, because I usually purchase a rotisserie chicken and pull off both the white and dark meat). Toss the shredded chicken in the taco seasoning. (I often do this the night before and let it sit in fridge until meal time. However, this is not necessary. I do think it improves the taste a bit.)

In a bowl, add seasoned chicken, salsa, and peach preserves. The amount of peach preserves will vary depending on how sweet you like things. Toss those ingredients together well.

Add vegetable oil to a skillet over medium heat. Add mixture and heat until bubbly and simmer about 5 more minutes. Place mixture inside a warm tortilla and roll it up.

This is one of those recipes you can make your own. You might like your salsa mild or crazy hot. You might like only a little sweetness from the preserves or dump in the whole jar.

Note: Although this sounds like it might make a good slow cooker meal, it does not! The lengthy cooking does something strange to the taste of the sauce and it becomes rather bitter.
