Description

This is a favorite in our house, especially served with coleslaw on top and a side of chips.

Ingredients

  • 2 pounds Pork Butt Or Shoulder
  • ½ whole Red Onion, Diced
  • ¾ cups White Vinegar
  • 1 bottle (18 Oz. Bottle) BBQ Sauce, divided
  • 1 bag (14 Oz. Bag) Cole Slaw Mix, Pre-shredded
  • ⅓ cups Mayonnaise
  • 2 Tablespoons Apple Cider Vinegar
  • 1 Tablespoon Sugar
  • 1 teaspoon Black Pepper
  • 8 loaves Hoagie Rolls

Preparation

Salt and pepper the pork and brown on all sides in a large skillet.

Place the browned meat into your slow cooker crock pot along with the diced red onion, white vinegar and half the bottle of BBQ sauce and cook on low for 6-8 hours.

Meat is cooked when it falls apart easily. Remove fat from the meat and discard. Shread cooked meat with a fork and place into a casserole dish. Add additional BBQ sauce and mix well.

Just before serving, make the coleslaw (don’t make it too early or it may get too moist). Combine cabbage mix, mayonnaise, apple cider vinegar, sugar and black pepper in a bowl and toss well.

Spread meat onto open-faced hoagie rolls. Top with a few spoonfuls of coleslaw.
