Description

A delicious and easy way to use all the zucchini growing in the garden.

Ingredients

  • 5 whole Zucchini
  • 8 slices Cooked Ham
  • 3 slices Mortadella
  • 2 whole Eggs
  • 1 bunch Parsley, Chopped
  • 1 clove Garlic, Grated
  • ¾ cups Breadcrumbs
  • 5 Tablespoons Grated Parmesan Cheese, Divided
  • ½ pounds Shredded Mozzarella, Divided
  • 1 teaspoon Salt And Pepper
  • 1-¼ cup Crushed Tomatoes
  • 1 bunch Fresh Basil Leaves

Preparation

Thoroughly wash zucchini and cut in halves. Remove the flesh, cut into pieces, and saute in a pan with a little olive oil. Set aside.

Chop the ham and the mortadella. Put the mortadella, ham, eggs, parsley, grated garlic, breadcrumbs, half of the grated parmesan and some of the mozzarella in a bowl and stir. Season with salt and pepper. Work the mixture by hand, adding the zucchini flesh and mixing well.

Stuff the hollowed zucchini with the filling and place on a greased oven dish. Pour the crushed tomatoes over the top and bake at 350 deegrees for 23 to 35 minutes. Check for doneness.

Add the remaining mozzarella and dust with some parmesan. Place in the oven for another 5 minutes until the cheese melts. Remove from the oven and leave to cool. Add fresh basil leaves on top before serving.
