Like manicotti, only easier.
Preheat oven to 375 degrees.
Cook shells according to package. Mix ricotta cheese, 8 oz. of the mozzarella cheese, parmesan cheese, eggs, parsley, salt and pepper in a mixing bowl with a fork.
Spread a thin layer of sauce in the bottom of a casserole dish.
Stuff each shell with a spoonful of cheese. Place shells on the sauce in the dish. Make one layer of shells. Cover with remaining sauce. Bake for 25 minutes.
Sprinkle remaining mozzarella over the top and bake for an additional 10 minutes. Let stand 10 minutes before serving. Refrigerate leftovers.
