Ingredients

  • FOR THE STUFFING:
  • ½ cups Melted Butter
  • 2 cups Dried Cranberies
  • 1-½ cup Italian Bread Crumbs
  • 1 teaspoon Minced Garlic
  • _____
  • TO ASSEMBLE THE DISH:
  • 2 pounds Pork Tenderloin
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Minced Garlic
  • Salt And Pepper, to taste

Preparation

1. Preheat the oven to 350ºF.
2. Mix the Stuffing ingredients in a medium mixing bowl. Set aside.
3. Fillet the tenderloin.
4. Place the stuffing mixture on the pork and roll it back up.
5. Drizzle some olive oil in the baking dish.
6. Place the rolled tenderloin in the baking dish and drizzle the remaining olive oil on top of the tenderloin along with the minced garlic.
7. Add salt and pepper to taste.
8. Place in the oven and cook for 27 minutes or until the pork is thoroughly cooked.
9. Take out of the oven and let stand for 3 to 5 minutes.
10. Plate up the tenderloin and enjoy!
