Description

Gruyere, spinach, onion, bacon, rosemary, and fresh tomato fill pork chops to make a simple yet impressive dinner.

Ingredients

  • 1 cup Uncooked Bacon, Chopped
  • 1 whole Medium Sized Onion, Diced
  • 1 whole Tomato, Diced
  • 2 sprigs Rosemary, Chopped (or 1 Tablespoon Dried)
  • 1 package (10 Oz. Package) Frozen Chopped Spinach, Thawed And Drained
  • ½ cups Gruyere Cheese (or Swiss)
  • 4 whole Pork Chops
  • ½ cups Chicken Stock
  • Salt And Pepper

Preparation

Preheat oven to 400 degrees.

Cook bacon and onions and cook until onion is slightly caramelized and bacon is cooked. Add tomato, rosemary, and spinach and cook until warmed through. Add salt and pepper to taste. Remove pan from heat and add cheese.

Cut pockets into the chops and then stuff the chops with the filling. Place filled chops in a 9×13 baking dish, placing extra filling on top of chops. Pour stock around the pork chops.

Bake covered for 45 minutes or until pork is done.

Absolutely delicious! I left out the tomato because I didn’t have any. I might add some chopped mushrooms next time.
