Yummy, gooey mozzarella and chicken. What could be better?
Melt the butter and put the garlic into the butter. Stir together and let sit.
Slice a pocket in each chicken breast. (Don’t cut it all the way through, just cut it like you would a hot dog bun that wasn’t pre-cut.)
Slice thick chunks of fresh mozzarella to the size of the slice in each chicken breast. Stuff the chicken with the sliced mozzarella. Place chicken breasts into a glass baking pan.
Take the butter and garlic mixture and rub it all over the chicken breasts. Whatever is left over, just pour into the pan.
Bake at 375ºF for 45 minutes. Trust me, this is GOOD! (I’ve also added sun-dried tomatoes to the “rub” and that’s good as well.)
Serve with rice or mashed potatoes and your favorite veggie.
