Stealth Zucchini Dinner (shh..please don’t tell my kids)

Description

My kids freak out if they see anything green in their food. So I modified another recipe so that the zucchini goes undetected. It is so yummy that they gobble it up and I feel good about using up the monster sized zucchini in my garden. If your kids are super detectives peel the skin off the zucchini first with a vegetable peeler, but I never do and they haven’t caught on yet.

Ingredients

  • 3 whole Zucchini, Shredded
  • 1 pound Ground Beef
  • 2 cloves Garlic, Minced
  • 2 cups Pasta Sauce
  • ½ teaspoons Dried Basil
  • ½ teaspoons Dried Oregano
  • 2 cups Fat Free Cottage Cheese
  • 1 Tablespoon Dried Parsley
  • 2 whole Eggs, Beaten
  • 1 cup Dry Seasoned Breadcrumbs, Divided
  • 2 cups Shredded Mozzarella Cheese, Divided

Preparation

Preheat oven to 350.

Shred zucchini, place in a colander to drain.

Brown beef and garlic. Drain beef. Stir in pasta sauce, basil, and oregano. Cook 1 minute. Remove from heat.

Combine cottage cheese, parsley, and eggs in a medium bowl.

Squeeze out excess liquid from zucchini.

Spray a 9×13 baking dish with non-stick spray.

Cover the bottom of the dish with a thin layer of zucchini. Sprinkle with half of the breadcrumbs.

Spread half of the cottage cheese mixture on top. Cover with half the meat mixture and 1 cup of mozzarella.

Repeat layers except for mozzarella. Place in a 350 degree oven. During the last 5 minutes of cooking sprinkle the remaining mozzarella on top.

I thought this was good but the rest of the family didn’t like it. I thought the zuchhini would be concealed more but, the kids knew something was up!
