This dish is definitely packin’ some heat, and if you’re a fan of Sriracha, it’s a must try!
Preheat oven to 450ºF. Line a rimmed baking sheet with parchment paper or grease it with a little Pam.
Slice peppers into strips then toss with olive oil, salt and pepper. Place in oven for 35–45 minutes, or until skin is charred.
While peppers are roasting, bring a pot of water to a boil and cook couscous according to package directions. Fluff, then toss with Sriracha sauce. Top with blistered peppers and enjoy.
