Description

Summer pizza with spring mixed herbs and salad ingredients.

Ingredients

  • 1 whole Pizza Dough (See My Recipe Box)
  • 1 Tablespoon Olive Oil
  • ½ cups Parmesan Cheese, Grated
  • 2 whole Fresh Tomatoes Sliced Thinly
  • 4 cloves Large Garlic, Chopped Roughly (Or Less To Taste)
  • ¾ teaspoons Kosher Salt
  • 2 cups Spring Mix Leafy Herbs (Loosely Packed) - I Like The Organic Mix Found In Our Grocery
  • 10 ounces, weight Fresh Mozzarella Cheese, Sliced
  • ¼ cups Balsamic Vinegar For Drizzling

Preparation

Preheat oven to 500 degrees.

Roll out pizza dough into a rectangular shape.

Drizzle on olive oil, followed by a little parmesan. Place in the oven as is for about 10 minutes.

While dough is prepping in the oven, lay sliced tomatoes on paper towels to drain water. Place another paper towel on top and press lightly to remove all excess moisture. (This step is important!)

Remove dough after 10 minutes and layer ingredients in this order: garlic, tomatoes, kosher salt over tomatoes, herb mix, mozzarella.

Bake at 500F for 10 to 15 minutes until cheese is bubbly and slightly browned.

Cool, cut and just before serving, LIGHTLY drizzle with balsamic vinegar.

Your salad ala pizza!
