Description

Spinach and roasted garlic turkey meatballs.

Ingredients

  • 2 heads Garlic
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1-¼ pound Ground Turkey Breast
  • 2 cups Chopped Baby Spinach
  • ½ cups Fresh Parsley Chopped Finely
  • 1 whole Large Egg
  • 2 Tablespoons Organic Palm Shortening Or More Olive Oil
  • 1 teaspoon Pink Himalayan Or Sea Salt Or To Taste
  • ¼ teaspoons Black Pepper, Or To Taste

Preparation

Preheat oven to 400ºF.

Cut tops off of heads of garlic in a straight line across. Rub extra virgin olive oil all over heads; wrap loosely in foil and place on a baking sheet. Roast garlic at 400ºF until caramelized and soft, approximately 30-35 minutes.

Leave oven at 400ºF and line large baking sheet with nonstick foil for easy cleanup.

In a large bowl, add ground turkey breast, chopped baby spinach, chopped fresh parsley, beaten egg, melted palm shortening (or olive oil), salt, pepper, and carefully squeeze roasted garlic heads to release the roasted garlic into the bowl. With your hands, mix everything together well until all ingredients are incorporated evenly.

Roll balls by hand in uniform sizes to ensure even cooking in the batch. Place on nonstick foil-lined (or parchment paper) baking sheet. Bake at 400ºF for about 25-30 minutes or until thoroughly cooked.

We liked these. Served them on buns with mozzarella and either sliced tomatoes or pasta sauce. I did use basil instead of parsley in the meatball mix as that was what I had.
