A vegetarian (and easily vegan) pizza with sundried tomatoes and spinach on an herby white bean base.
Preheat oven to 450ºF.
Pre-bake your pizza dough for 5 or 10 minutes.
Soak the sundried tomatoes in water for a few minutes to soften. Cut them into fourths with scissors.
In a food processor combine beans, garlic, spices, salt, oil, and lemon juice until smooth. Spread the bean paste on the pizza crust and top with sun-dried tomatoes, spinach, and Parmesan. Bake for 10 minutes, until spinach wilts and cheese has melted. Enjoy!
