Description

I am a huge fan of spinach and artichoke dip! This recipe came about when I was trying to put together an orange sweet potato crockpot dish, and I forgot to buy sweet potatoes! I had to leave for work and had minutes to improvise. Grabbing what I had on hand I came up with this dish. I was rather nervous because the dish was thrown together so quickly. However, I was not disappointed- it was yummy!

Ingredients

  • 1-½ pound (4 Breasts) Boneless Skinless Chicken Breasts
  • 1 can (10 Oz. Size) Fat-Free Cream Of Chicken Soup
  • ⅔ cups Frozen, Chopped Spinach, Thawed
  • ⅔ cups Artichoke Hearts, Rinsed And Chopped
  • ½ cups Onions, Sliced
  • ⅛ cups Grated Parmesan Cheese
  • ½ cups Sour Cream
  • 1-¼ cup Water
  • 1 Tablespoon Garlic, Minced
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • ¼ cups Shredded Mozzarella Cheese

Preparation

Lightly grease crockpot with Pam cooking spray. Place chicken breasts into crockpot. In a separate bowl, mix soup, spinach, artichokes, onions, parmesan cheese, sour cream, water, garlic, salt, and pepper. Pour mixture over chicken breasts. Cook on high 4-6 hours or low 7-8 hours. Stir in the mozzarella cheese right before you are ready to eat. Serve over pasta or rice.

I have this in the crock pot now! So excited! I threw the chicken in frozen and doubled the veggies as per one review. Can’t wait to taste it tonight!

This is soooo good!!! A hit with the hubby and the kiddos. I cut the chicken into bit size pieces before serving over egg noodles. I added cream cheese to thicken it a bit at the end. Will definitely make again!!

Delicious! Wanted to use up some fresh spinach and didn’t find the recipe in time to cook in crock pot, so I tried it in the oven…350 degrees for approximately 1 hour, worked great. Also used chicken tenders, instead of chicken breasts. Absolutely wonderful!

Not really a winner at our house, it seemed lacking to me. But every time I’ve used spinach in the crock pot it just doesn’t taste right (my opinion).

I’m halfway through cooking this right now, I used what I had on hand and threw egg noodles right into the stockpot about 30 minutes ago. I cant stop going back for tastes!
