Crispy fried chicken without the mess of frying.
Preheat oven 375 F. Lightly grease a rimmed baking dish.
Crush Ritz crackers into fine crumbs and put the crumbs into a shallow bowl of dish. Mix in salt, paprika, cayenne and black pepper.
In a separate bowl beat egg and milk together.
In another separate bowl add one cup flour then add a pinch of salt and pepper to the flour.
Dip chicken in the flour, then into the egg/milk mixture and finally coat well in the cracker crumbs. Place chicken in the prepared baking dish and drizzle with melted butter or margarine. Bake in oven for 45-60 minutes or until golden brown turning at least once.
