Description

My favourite Monday night dinner—so quick and simple!

Ingredients

  • 5-⅓ ounces, weight Spaghetti
  • 1 cup Broccoli (minus The Big Stems)
  • 1 pound Bacon
  • 1 cup Crème Fraîche
  • Vegetable Broth (Powder, Cube, Or Paste), To Taste
  • Salt And Pepper, to taste
  • ½ cups Chopped Walnuts

Preparation

Boil the spaghetti in salted water. In the meantime, cut up the broccoli into bite-sized bits and fry in a deep pan for a few minutes while stirring frequently. Cut the bacon to pieces and add to the broccoli. When the bacon bits are nice and brown, add the creme fraiche and vege broth (I usually use one cube). Stir and let simmer on low heat for a few minutes. Season with salt and pepper, then add the walnuts. Let simmer for another minute, then add the spaghetti. Mix and serve immediately.

This was wonderful! What a great dish. I will definitely be making this again. When I do however, I am going to try cooking the bacon first, then adding the broccoli. I ended up sticking the skillet under the broiler to get the bacon crisp because my pan was just a bit crowded. Thank you so very much for sharing. This is a new favorite!
