Description

This easy baked pasta is a great way to get the kids to eat veggies and can easily be converted to vegetarian by leaving out the meat and just adding more beans.

Ingredients

  • 1 pound Ground Turkey
  • 1 Tablespoon Olive Oil
  • 1 package (1 Oz. Packet) Taco Seasoning
  • 1 package (10 Oz. Package) Frozen Spinach, Thawed
  • 28 ounces, weight Can Crushed Tomatoes
  • 1 cup Salsa (or More, If Desired)
  • 12 ounces, weight Whole Wheat Pasta, I Used Medium Shells, Cooked
  • 1 can (15 Oz. Can) Black Beans, Rinsed And Drained OR 2 Cups Cooked
  • 2 cups Frozen Corn, Thawed
  • Shredded Cheese (Cheddar, Pepper Jack, Etc.), For Topping

Preparation

Preheat oven to 425 degrees. Heat oil in a skillet over medium heat. Add meat and brown. Add taco seasoning and mix to coat meat. Add spinach, tomatoes and salsa. Heat to boiling then reduce the heat and simmer. Cook pasta according to package directions, reducing cooking time by 4 minutes. Drain and add pasta, corn and beans to the meat mixture, stir to combine. Pour into a 9×13 inch pan. Top with as much cheese as desired. Bake for 20 minutes or until browned and bubbly. Let stand for 10 minutes before serving.

Note: you could certainly add more cheese to the filling mixture but since I have to limit my dairy intake, I only use it on the top.
