Description

Delicious Red Snapper recipe.

Ingredients

  • 2 pounds Red Snapper
  • 2 Tablespoons Olive Oil
  • ½ cups Clam Juice
  • 2 whole Shallots
  • ½ cups Minced Cilantro
  • ½ cups Minced Parsley
  • 1 whole Juice Of A Lime

Preparation

-Preheat oven to 400 degrees
-Rinse fish and pat dry
-Drizzle oil on both sides
-Salt and pepper
-Place snapper in glass baking dish
-Pour clam juice over fish
-Cover with aluminum foil and place in oven
-Bake 15 minutes or until fish flakes easily with fork
-Dice shallots and place in small bowl
-Pick cilantro off stems and mince
-Place in bowl with shallots
-Add parsley
-Juice lime in bowl
-Stir mixture and place in fridge
-Remove fish from oven
-Spoon cilantro mixture and clam juice onto fish and serve!

*serve with roasted potatoes

It was fish Friday at our house today and this recipe was perfect for today’s menu.

I loved the way the parsley and cilantro tasted on the fish; turned out super tender and very flavorful.

Pairs nicely with roasted veggies if you’re watching your carbs.
