Description

There are so many great things about this sauce, but perhaps my favorite aspect is that it is a delicious, solid foundation you can add to, easily adapting it to whatever you’re in the mood for!

Ingredients

  • 1 pound Italian Pork Sausage
  • 1 whole Small Onion, Chopped
  • 2 cans (14 Oz) Diced Tomatoes (with Juice)
  • 1 can 8 Oz. Tomato Sauce
  • 1 can 6 Oz Tomato Paste
  • 1 whole Bay Leaf
  • 3 cloves Garlic, Minced (3-4 Cloves, Depending On Taste)
  • ½ teaspoons Salt
  • 2 teaspoons Dried Oregano
  • 2 teaspoons Dried Basil
  • ½ teaspoons Dried Thyme
  • 1 Tablespoon Brown Sugar
  • Red Pepper Flakes, to taste
  • 1 whole Handful Of Parmesan Cheese, Grated

Preparation

1. In a large skillet, brown pork sausage until no pink remains.

2. Remove sausage with a slotted spoon and place on a paper-towel-lined plate. Pat it dry with paper towels to remove excess grease.

3. Into the slow cooker, add the onion, diced tomatoes, tomato sauce and tomato paste.

4. Add cooked sausage to the slow-cooker tomato mixture.

5. Add bay leaf, garlic, salt, oregano, basil, thyme, brown sugar and red pepper flakes. The latter is to your own taste (I recommend 1/4 teaspoon to start). If your family can’t take the heat, you can leave out the red pepper flakes, and the sauce is still delicious!

6. Add Parmesan cheese and stir all ingredients a few times to incorporate spices and cheese evenly. Turn the slow cooker on Low and let simmer for 5-6 hours.

7. You can also load this sauce up with tasty veggies for a chunkier consistency and unique twists. Optional ingredients: eggplant, zucchini, bell peppers, roasted red peppers, spinach, mushrooms, other Italian cheeses, or substitute pork for ground beef or turkey.

If your crockpot is big enough, you can easily double this recipe and freeze extra for those nights you’re just too tired to cook.

Twinks (sorry for the delay), I’ve made it with 93/7 ground turkey. I kept a little of the fat for flavor, and added a sprinkle of Italian seasonings while it was cooking. Still yummy!

I have been looking for a good homemade sauce that doesn’t use a jar of sauce, too. I can’t wait to try this!

This is a fantastic recipe. It was simple to put together and incredibly flavourful and delicious. I will probably never buy jarred sauce again. I did it with ground turkey, and added Herbs de Provence (because I was missing a couple in the list at the time). My ‘add-ins’ included leeks, carrots, celery, and shredded zucchini. Totally forgot to add the Parmesan, but it was still yummy! Hubby & toddler- approved! Thank you!

Loved it! The sausage and the red pepper gave it just enough zing and the smell of it simmering in the crock pot all afternoon was amazing. Next time I make it I’m going to try it with some veggies thrown in, but overall, just delicious!
