Description

I was challenged to make stuffed peppers from someone who had just moved to my community and had nothing in their kitchen. I didn’t want to buy a ton of ingredients, so this was a super easy dinner to put together fast without buying a ton of different ingredients.

If you don’t want to buy the Sloppy Joe seasoning mix, just use the below recipe.

Ingredients

  • FOR THE SLOPPY JOES:
  • 4  Bell Peppers
  • 1 pound Ground Turkey Or Buffalo
  • 1 cup Tomato Paste
  • 1 envelope 3 Ounce Packet, Sloppy Joe Seasoning
  • ¾ cups Grated Sharp Cheddar Cheese
  • FOR THE SLOPPY JOE SEASONING MIX:
  • 2 Tablespoons Chili Powder
  • 1 Tablespoon Garlic Salt
  • 1 Tablespoon Onion Powder

Preparation

If making your own Sloppy Joe seasoning, mix the chili powder, garlic salt and onion powder in a small bowl. Set aside.

Preheat oven to 375 F.

Put the bell peppers on a rimmed sheet pan. Roast the bell peppers in the oven until just charred, roughly 15-20 minutes, turning them halfway through. Remove pan from the oven and set it on a rack. Let the peppers cool before stuffing them, about ten minutes. Keep the oven on.

While you are roasting the peppers, put the turkey into a skillet over medium heat. Once the turkey is browned and broken up, add the tomato paste and the sloppy Joe seasoning and mix to combine.

Cut off the tops of the peppers and clean out the seeds. Then stuff the peppers with the turkey mixture and put them into a baking dish, standing up. Put the cheese on top. Bake at 375 F for twelve minutes.
