Description

Yummy chicken breast with veggies and Alfredo sauce. Bare with me it’s my first time writing a recipe. I am a cook with them all in my head not on paper! Enjoy

Ingredients

  • 4 whole Chicken Breasts
  • 5 Tablespoons Olive Oil
  • 2 Tablespoons Sun-dried Tomatoes, Diced
  • 2 whole Mushrooms
  • 1  Lemon, Cut In Wedges
  • 1 bunch Fresh Spinach
  • 6 Tablespoons Alfredo Sauce (or Home Made If You Wish)
  • 1 cup Crumbled Feta Cheese
  • 3 teaspoons Greek Seasoning
  • 4 Tablespoons Lemon Juice
  • 4 whole Pieces Of Aluminum Foil

Preparation

Preheat oven to 350F. Place chicken on a large baking sheet and pour on olive oil. Bake in the preheated oven for 15 minutes or till cooked through.

While chicken is cooking, dice sun dried tomatoes, slice mushrooms, slice lemon wedges and chop spinach. (If you are making homemade Alfredo this would be the time to prep as well).

When chicken is cooked through, remove it from the oven and cut it in half horizontally. Spread Alfredo sauce on all of the “cut” sides of the chicken breasts.

Then place spinach, tomatoes, mushrooms and feta cheese on the bottom half of each chicken breast. Place bottom piece of chicken on a sheet of aluminum foil and place the top of the breast on top.

Pour 1 tablespoon lemon juice over chicken then sprinkle with Greek seasoning. Place 2 lemon wedges on top of the chicken and wrap the entire breast in foil. Place the foil packets on a baking sheet and put in the oven for 10 minutes. Remove from oven and serve immediately.
