Description

This is a simple 8-ingredient oven fried chicken that will wow your family and guests. Although it is a little unorthodox (using mayo) it is imperative that you do not skip this. Your chicken will come out moist, tender, and flavorful.

Ingredients

  • 1-½ cup Italian Bread Crumbs
  • 2 Tablespoons Garlic Salt, Divided
  • 2 teaspoons Ground Black Pepper, Plus More To Season Chicken
  • 2 teaspoons Dried Thyme
  • 1 teaspoon Paprika
  • 1 Tablespoon Italian Seasoning
  • 4 whole Boneless, Skinless, Chicken Breasts, Cut In Half Crosswise
  • 1 cup Mayonnaise

Preparation

1. Preheat your oven to 350 degrees F (175 degrees C).
2. In a medium bowl or plastic bag, mix together the bread crumbs, 1 tablespoon garlic salt (reserve about 1 tablespoon to season the chicken), pepper, thyme, paprika, and Italian seasoning.
3. Season your chicken with garlic powder and black pepper.
4. Coat your chicken pieces with mayonnaise.
5. Take the mayo-coated chicken pieces and coat them in the bread crumb mixture.
6. Place fully coated chicken pieces on a light greased large cookie pan and bake uncovered for about 35-45 minutes (until chicken juices are clear).

Serve with your favorite comfort side.

This was a big hit at our house! I used thinly sliced boneless, skinless breasts. It was funny because my husband wanted me to fry chicken breasts rather than to bake them, but I just told him that I didn’t want to fool with frying on a weeknight. When I served dinner, he looked at me and said, “I thought you didn’t want to fry tonight?” Funny story – great recipe – Thanks for sharing! We will definitely have this again. Very moist and flavorful recipe – perfect for a Wednesday night!
