Description

Easy to prepare shrimp tacos with cabbage and chipotle lime sauce. Only takes about 10 minutes!

Ingredients

  • FOR THE CHIPOTLE LIME YOGURT SAUCE:
  • ½ cups Plain Yogurt
  • ½ cans (7 Oz. Size) Chipotle Chilies In Adobo Sauce, About 7 Chilies, Chopped
  • 1 Tablespoon Fresh Lime Juice
  • FOR THE SHRIMP TACOS:
  • 1 Tablespoon Grapeseed Oil (or Olive Oil)
  • ½ pounds Raw Shrimp, Peeled And Deveined
  • 1 pinch Salt
  • 1 pinch Ground Black Pepper
  • 1 dash Paprika
  • 4 whole Corn Tortillas Of Your Choice
  • ⅛ heads Cabbage, Sliced
  • FOR THE OPTIONAL TOPPINGS:
  • 4 Tablespoons Red Onion, Chopped
  • ½ whole Avocado, Sliced

Preparation

Prepare the chipotle lime yogurt sauce. Add the yogurt, chopped chipotle chilies and lime juice to a bowl and stir to combine. Set aside.

For the tacos, heat grapeseed oil in a skillet over medium high. Place shrimp on their side and sprinkle with salt, black pepper and paprika. Allow them to cook until the tails turn pink, no more than 1 minute. Flip them over then cook another 30 seconds to 1 minute until shrimp are pink and no longer transparent.

Heat the tortillas on a skillet, about 45 seconds each side. Place chopped cabbage, shrimp and desired amount of chipotle sauce on tortillas. Add your favorite toppings, such as red onion, avocado or guacamole.
