Description

Delicious shrimp dish that is a total crowd pleaser.

Ingredients

  • 1 pound Potatoes, Peeled And Evenly Cubed
  • 2 Tablespoons Butter, Unsalted
  • 3 Tablespoons Garlic, Minced
  • 1 whole Small Onion, Peeled And Finely Chopped
  • ¼ cups White Wine Vinegar
  • 2 cups Fresh Mushrooms, Finely Chopped
  • ¼ cups Sour Cream
  • 2 Tablespoons All-purpose Flour
  • 2 Tablespoons Parmesan Cheese, Grated
  • ⅛ Tablespoons Cayenne Pepper
  • 1 pound Shrimp, Uncooked, De-veined, Shells Removed
  • 2 cups Shredded Mozzarella And/or Cheddar Cheese
  • Chopped Fresh Parsley For Garnish (optional)

Preparation

1. Put potatoes into a pot and cover with water. Bring to a boil. Boil potatoes for 15 minutes or until fork-tender. Drain them then set them aside in a 9×13 casserole dish, covering with aluminium foil. Preheat oven to 350 F.
2. To create the sauce, add butter, garlic and chopped onion into a pan over medium heat. Stir until butter is melted about 2 minutes. Add the white wine vinegar. Simmer for a minute.
3. Add the finely chopped mushrooms into the sauce. Simmer until mushrooms soften (3-5 minutes). Add sour cream, flour, Parmesan cheese and cayenne pepper. Reduce heat and allow it to simmer for 5 minutes.
4. Add shrimp and simmer just until they turn pink (about 5 minutes).
5. Transfer sauce mixture into the casserole dish on top of the potato mixture. Add the shredded mozzarella/cheddar cheese over the top.
6. Bake at 350 F for 12 minutes until cheese is melted. Remove, top with fresh parsley and serve.
