Description

This is a delicious one-pot recipe passed down from my mom. It’s full of meat and veggies with a bit of spice!

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 cups Onion, Chopped (2 Onions)
  • 3 stalks Celery, Chopped
  • 2 cloves Garlic, Chopped
  • 2 whole Green Bell Peppers, Chopped
  • ¼ pounds Pepperoni, Sliced
  • 1 pound Turkey Sausage, Sliced
  • 14-½ ounces, fluid Diced Tomatoes
  • ¾ teaspoons Dried Thyme
  • 1 teaspoon Dried Oregano
  • ½ teaspoons Chili Powder
  • ½ teaspoons Salt
  • 1 teaspoon Pepper
  • 2 cups Chicken Broth
  • 1-¼ cup Raw Rice
  • ¾ pounds Medium Shrimp

Preparation

Heat oil in large pan over medium heat.

Add onions, celery, and garlic. Cook until soft, about 10 minutes.

Add green peppers, sausage, and pepperoni and cook until very soft, about 10 minutes.

While that cooks, drain tomatoes and reserve liquid.

After 10 minutes, add tomatoes, herbs, chili powder, salt, and pepper to pan. Stir the mixture. Add rice and enough chicken broth to cover the rice (if needed). Cover pan and simmer until rice is almost done (about 18-20 minutes).

Add shrimp to pan. Cook until they just turn pink (about 3-5 minutes).
