Description

Baked salmon with sesame in an Asian-inspired citrus marinade.

Ingredients

  • FOR THE SALMON:
  • 17 ounces, weight Salmon Fillet
  • 1 cup Sesame Seeds
  • Cooked Rice, To Serve
  • FOR THE MARINADE:
  • 2  Oranges
  • ½ teaspoons Ginger, grated
  • 2 cloves Garlic, Chopped
  • 4 Tablespoons Soy Sauce
  • 1 Tablespoon Mustard

Preparation

Cut the salmon fillet into pieces that are about 6cm wide. Place in a deep heat-safe bowl. Set aside.

For the marinade, cut the oranges in half and squeeze the orange juice into a small pan. Add the remaining marinade ingredients. Mix well and place over medium heat. Bring the marinade to a boil then pour it over the salmon pieces. Put dish into the refrigerator and let it marinate for no more than 2 hours.

Remove salmon from the fridge and pull it out of the marinade. Put the sesame seeds on a cutting board and roll the salmon pieces in the seeds. Place into a greased deep roasting tin. Bake at 350ºF (180ºC) for 20-30 minutes.

Serve the salmon with rice!
