Description

Live dangerously. Live divinely. EAT THIS.

Ingredients

  • 3 Tablespoons Extra Virgin Olive Oil, Divided
  • ½ pounds Asparagus, Tough Ends Trimmed
  • 1 pound Fresh Ahi Tuna
  • 2 Tablespoons Freshly Ground Pepper
  • 2 teaspoons Coarse Salt, Divided
  • 2 cups Arugula
  • 2 Tablespoons Fresh Lemon Juice

Preparation

Liberally salt and pepper both sides of the ahi tuna. Yum. I’m already salivating.

Heat 2 Tablespoons of the oil over medium-high. Add the asparagus, sprinkle with salt and saute about 4 minutes, until crisp-tender. Remove from pan to keep warm.

Heat another Tablespoon of oil in a medium skillet over high heat. Once you see the oil shimmer, add the tuna to the pan and sear for maybe 2 minutes. But no more. Flip and sear 1 more minute. You’re done. Don’t be nervous. Just do it. Remove from pan and let rest a few minutes. Slice thinly.

Serve tuna over asparagus with arugula and spritzed lemon.

I was worried. I don’t eat a lot ocean fish, as it’s ridiculously expensive where I live. Also, it wasn’t intended to cook all the way through. I am on vacation in Hawaii, and ahi was not $30/lb, and I decided to try it.
No need to worry! It was delicious, almost steak-like. My ahi was about an inch thick, and the cooking time recommended made it look just like the picture. I let it rest, sliced it… and deliciousness ensued!
I did briefly marinate the asparagus in an Italian-type dressing, and I’d recommend that to anyone. It makes it even more delicious.
