This is your everyday simple casserole. It is also the ultimate reheat-able lunchtime meal!
Preheat oven to 350 degrees.
1. Cook rice according to box directions (should take about 25 minutes).
2. In a heavy skillet over medium heat, cook sausage until thoroughly done. (I love to use Hormel Lil’ Sizzlers maple sausages, but any breakfast meat will do!)
3. Drain the sausage. Place onion and mushrooms in the same skillet and get up all the remaining sausage drippings for added flavor. You can chop up the sausage while they are heating.
4. Combine all ingredients (here’s where you add the cream of mushroom soup) into a casserole dish.
5. Bake until the top starts to bubble, approximately 25 minutes.
