Description

A lightly dressed pasta dish that’s ready in under 30 minutes!

Ingredients

  • 8 ounces, weight Whole Wheat Spaghetti
  • 4 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 2 whole Medium Zucchini Cut Diagonally Into 1/4-inch Pieces
  • 1 cup Chopped, Fully Cooked Sausage (any Kind)
  • 1 whole Garlic Clove, Minced
  • 2 whole Roma Tomatoes, Roughly Chopped
  • 1 Tablespoon Chopped Fresh Basil
  • ¼ teaspoons Salt
  • ⅛ teaspoons Freshly Ground Black Pepper
  • ½ cups Shredded Parmesan Or Pecorino Romano Cheese

Preparation

Cook spaghetti according to package directions; set aside.

Bring butter and olive oil to medium-high heat in a large skillet. Add sliced zucchini. Saute for 3 to 4 minutes or until the centers begin to show. Add sausage and garlic. Cook and stir for another 3 to 4 minutes. Add tomato, basil, salt and pepper. Cook until sausage is heated through and tomatoes begin to fall apart.

Add cooked spaghetti to the skillet and toss to combine. Add more salt and pepper if you think it needs it. Add half of the Parmesan/Romano cheese and mix well. Sprinkle remaining cheese over the top and serve.

Makes about 3 to 4 servings.
