Get ready for Sunday game day with these delicious crock pot nachos!

Ingredients

  • 2 pounds Chicken Breasts
  • 1 jar (16 Oz.) Salsa, Your Favorite Brand And Flavor
  • 1 can (2 Oz. Cans) Sliced Fire Roasted Green Chilies
  • 1 package (1.25 Oz) Taco Seasoning
  • 1 can (14.5 Oz.) Corn
  • 1 bag (12 Oz.) Tortilla Chips
  • Optional Nacho Toppings: Shredded Cheddar Cheese, Sour Cream, Sliced Black Olives

Preparation

Place raw chicken breasts in your slow cooker. Pour the salsa, green chilies, taco seasoning, and corn over chicken. Place cover on crock pot. Cook on High for 4 hours. Stir occasionally (not necessary if you’re making these while you’re not home).

Once cook time has finished, since you’ve been stirring it occasionally, the chicken should be shredded nicely. But if not, help it along and shred it with two forks. The chicken will have absorbed a lot of the liquid resulting in super tender and well flavored meat.

Assemble your nachos… Here’s my favorite way: Chips on the bottom. Covered with a spoonful (or two) of shredded chicken mixture. Top with cheese, sour cream, and olives. Top with any other of your favorite nacho fixings. Devour and enjoy immensely!!

This was so easy and delicious! The first night I had them as nachos, then used the leftovers for a salad one night, and then put it over rice with a bit of cheese for a lunch. The longer it sat in the fridge the more the spices came out. Thank you for the recipe!
