Description

Can you say el-cheapo?! Salmon Patties are a great way to add a budget-friendly meal to your weeknight menu.

Ingredients

  • 2 cans (15 Oz. Size) Boneless Pink Salmon
  • 4  Green Onions, Chopped
  • 2 Tablespoons Chopped Parsley
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Flour
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Fresh Dill, Chopped
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 2 Tablespoons Canola Mayonnaise
  • 2  Eggs, Lightly Beaten
  • 1 cup Saltine Cracker Crumbs
  • 3 Tablespoons Vegetable Oil

Preparation

In small bowl combine salmon, onion, parsley, lemon juice, flour, garlic, dill, salt and pepper. Stir in mayo, eggs and bread or cracker crumbs. Shape into 12 patties.

Heat oil in skillet over medium heat. Once oil is hot, cook patties for about 4 minutes on each side, or until lightly browned, turning gently. Remove from the oil once they are cooked, and drain on a paper towel lined plate to drain.

ClaireS, you can don’t need boneless salmon. The bones in salmon dissolve in the canning process and are a great source of calcium. Most canned salmon is skinless though.

LOVE Salmon patties and can’t wait to try your version. My only complaint with making them is prepping the salmon out of the can …. I can’t find boneless canned salmon here in FL. What brand do you use? Thanks!

I made mine with fresh sdalmon instead of canned boneless skinless and just put it in the food processor turned out great! Even my pickiest eater enjoyed it. Thanks
