Description

Pork cooked in the crockpot until juicy and tender, then smothered with a root beer-based sauce.

Ingredients

  • 2-½ pounds Pork Sirloin Or Pork Shoulder
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 2 whole Onions, Cut Into Wedges
  • 4 cups Root Beer, Divided
  • 6 cloves Garlic, Minced
  • 1 cup Bottled Chili Sauce

Preparation

Trim fat from meat. If necessary, cut roast to fit into a 3-1/2- to 5-quart crockery cooker. Sprinkle meat with the salt and pepper. Transfer meat to the cooker. Add onions, 1 cup root beer, and garlic.

Cover and cook on low heat setting for 8 to 10 hours or on high heat setting for 4 to 5 hours. Meanwhile, for the sauce, in a medium saucepan combine the remaining 3 cups of root beer and the chili sauce. Bring to a boil; reduce heat. Boil gently, uncovered, stirring occasionally, about 30 minutes or until mixture is reduced to 2 cups.

Transfer roast to a cutting board or serving platter. Using a slotted spoon, remove onions from the cooking juices and place on a serving platter. Discard juices. Using 2 forks, pull meat apart into shreds. To serve, line buns with lettuce leaves and tomato slices, if desired. Add meat and onions; spoon on sauce.

Makes 8 to 10 servings.

*Note: Do not substitute with diet root beer.

Do you have a particular brand of Chili sauce that you like to use?

I had this for dinner recently and it was great. If you cook the sauce as directed it thickens up some, but if it is still to thin for you then you may want to go another route. I used pork shoulder and like I said it was great. Thanks for sharing.

I made this for dinner tonight. Started it about 8am. It was the best thing EVER! The sauce was great- we put cole slaw on top of the meat and then the sauce. The kids ate two servings and hubby had three. Thanks for the recipe!!! I would not change a thing.

The sauce was MUCH too spicy, I just noticed you used Heinz Chili sauce, which much be much milder than the one I used. I only used 1/2 cup and it was like fire. The crockpot meat with the rootbeer was ok though, but I think I’ll follow the lead of others and just use BBQ sauce.

This was alright. The sauce was a little too thin and made the bread all soggy. I think we’re just going to stick with bbq sauce for our pulled pork sandwiches. The sauce was good but not very sweet, I think if I tried this again, I’d use Coke instead of Root Beer.
