Rubbed in mustard, honey, and tarragon, this turkey makes a moist, juicy alternative to lunchmeat.
Preheat the oven to 425ºF.
Combine the mustard, honey, tarragon, salt, and pepper in a small bowl. Place the turkey breast in a pie dish lined with aluminum foil and spoon the mustard mixture over the turkey to coat it completely. Bake for 20 minutes, or until the exterior is golden.
Reduce the heat to 375ºF and bake for another 20 minutes, or until the turkey is cooked through. Let cool before slicing. Enjoy!
