Description

A hearty pizza that goes great with sides of sour cream and salsa. Add a salad for a complete meal. I’ve even had this for breakfast with some fruit!

Ingredients

  • Homemade Or Store-Bought Pizza Dough Or Already-Made Crust
  • 2 cups (Leftover) Roasted Or Baked Unpeeled Potatoes, Cubed
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Dry Ranch Dressing Mix
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Mayonnaise
  • 8 slices Provolone Cheese
  • 8 strips Cooked & Crisp Bacon, Roughly Chopped
  • 1 cup Shredded Cheddar Cheese (or More)
  • ¼ cups Sliced Green Onions (3 Sprigs), Optional
  • Salsa (optional)
  • Sour Cream (optional)

Preparation

Prepare your pizza dough/crust of choice according to package directions. I bake my dough til almost done before I put the toppings on.

While crust is baking… Mix Potatoes, Olive Oil and the Dry Ranch Dressing in medium bowl.

When crust is almost done, mix the Mayonnaise and Dijon Mustard and spread thinly over crust (optional, but good!).

Arrange Provolone slices on crust. Spoon Potato mix evenly over the Provolone. Sprinkle with Cheddar Cheese and Bacon.

Bake at 350 degrees until toppings are melted and crust is golden & crisp.

Optional: Sprinkle with green onions. Serve with Salsa and a dollop of Sour Cream. Ranch Dressing is also great!
