Description

Cheese? Ranch?? Chicken??? Yes, please. I decided it would be perfect paired with the Pioneer Woman’s Twice Baked Potatoes, which I super love (slightly altered.) Everything was super yummy, the family gobbled it up!

Ingredients

  • 6 whole Boneless, Skinless Chicken Breasts
  • 2 jars Ranch Dressing (20 Ounce Jars, I Use Litehouse Homestyle Ranch In The Refrigerator Section)
  • 6 whole Sourdough English Muffins
  • 6 Tablespoons Melted Butter
  • 1 cup Grated Parmesan Cheese
  • 1 teaspoon Garlic Salt
  • ½ teaspoons Pepper

Preparation

Put the chicken into a glass dish and add a jar of ranch, making sure the chicken is coated. Put the dish into the refrigerator and marinate the chicken in the ranch dressing for at least an hour.

Set oven to 400 F. Spray a sheet pan with non-stick baking spray.

In a blender or food processor, add English muffins and pulse until you have crumbs. Add the butter and mix together. Dump bread mixture into a pie tin and add Parmesan cheese, garlic salt and pepper.

Take your chicken and dredge it (even more) in ranch dressing, using your other bottle of rahcn. Dip it into the bread crumb mixture and then set it on the baking sheet. Bake for 35 minutes or until the chicken is cooked through.

DH & I loved this! I substituted Panko bread crumbs for the english muffins because it’s what I had on hand, but it turned out wonderfully! Definitely something I will make again. :)
