Description

A flavorful chicken salad you can whip up in 5 minutes or less!

Ingredients

  • FOR CHICKEN SALAD:
  • 1 can (10 Oz.) Chicken
  • 3 Tablespoons Mayonnaise
  • ¼ teaspoons Salt
  • 1 teaspoon Tarragon
  • 3 dashes Savory
  • 1 dash Pepper
  • FOR SANDWICH:
  • 4 leaves Lettuce (large Leaves)
  • 4 slices Tomato
  • Onion Slices (optional)

Preparation

1. Drain the can of chicken thoroughly.

2. Combine the chicken pieces with the rest of the ingredients. Add more mayonnaise to get your favorite consistency.

3. Cut the pita bread in half, and gently open each half. Set aside.

* The following will keep your pita from getting soggy if you plan to make this ahead of time and save for lunch that day or the next:

4. Lay out 2 of the lettuce leaves and place half of the chicken salad on each leaf. Spread it out to be about the size of half the pita and place 2 tomato slices on top to cover.

5. Wrap the lettuce leaf around what is on top of it. Place the third and fourth leaves on top of the two packets, flip them over, and wrap again. Put these packets into the pita pocket halves. This will keep the mayonnaise and the tomato juice separated from the pita and keep the salad from squirting out if the pita separates. (Not pictured—I wanted to show off my tomatoes!)

Optional: For an even more flavorful but less quick and easy chicken salad, use a rotisserie chicken.
