Description

I found mini pepperoni slices at the grocery store and knew there were mini pizzas in our future!

Ingredients

  • 1 can (about 16 Oz. Can) Refrigerated Biscuits (I Used Grands)
  • 1 cup Mozzarella Cheese, Shredded
  • 1 Tablespoon Dried Oregano
  • 2 ounces, weight Mini Pepperoni Slices

Preparation

Preheat oven to 375 degrees. On a clean surface, use a rolling pin to flatten each biscuit dough into about a 4-inch circle. Place on a greased or lined baking sheet. Sprinkle each crust with about 2 tablespoons mozzarella, a little oregano and a few pepperoni slices. Bake for 10-12 minutes or until crust is fully cooked and lightly browned around the edges.

We used to make something similar to these growing up. We’d use the flaky biscuits and separate them into 2 or 3 pieces. We’d also add pizza sauce, then the cheese & pepperoni. Seeing these again makes me want to make them for my kiddos soon.
