Description

So easy and yummy!

Ingredients

  • ½ cups Breadcrumbs
  • ½ cups Cornmeal
  • ¼ cups Parmesan Cheese
  • 1 teaspoon Cajun Seasoned Salt
  • ½ teaspoons Garlic Salt
  • 1 cup Ranch Dressing
  • 6 pieces Boneless, Skinless Chicken Thighs

Preparation

Preheat oven at 425° F.

On a large plate mix together breadcrumbs, cornmeal, Parmesan cheese, Cajun seasoning and garlic salt, set aside.

Pour ranch dressing into a bowl and dip each chicken thigh into the dressing and then into the seasoned breadcrumb mixture.

Place on a foil lined cookie sheet and repeat until you have all of the chicken thighs on the cookie sheet.

Place in 425° F oven and bake for 30 minutes or until cooked through.

Very good! Normally, my biggest problem with recipes for breaded chicken is getting the breading to stick. This breading held on great. The only changes I made were to omit the cheese (just forgot!) and to spritz lightly with a little non-stick spray. Will definitely make again.

Made this for dinner last night and everyone loved it! I didn’t have quite enough ranch so I used half ranch and half buttermilk. For the breading, I used half Garlic and Herb breadcrumbs and half panko. I don’t have any Cajun seasoning so I mixed some Lowry’s with cayenne pepper and it turned out great!

It was so quick and easy to make! It took me about 10 minutes to throw everything together.

This is a delicious recipe!! Made my own ranch dressing to dip the chicken in and it added such a yummy flavor. This is on the rotation for this family of 6!!

This was very good. A nice weeknight meal. Loved the cornmeal flavor in the crust. I didn’t have cajun season salt so I just used regular season salt. Any suggestions for brands of cajun season salt? Thanks for a great recipe!

I had no clue about the cajun seasoned salt, but had Emeril’s Essence on hand (which has salt in it), so I used it. We are cutting our sodium intake, so I also used a little garlic powder instead of the garlic salt. It was great! We ate it as a main course the first night and had leftovers, so we chopped it up and put it in salads on day 2. I’ve made it several times this same way, so it’s in our monthly rotation.

This was fabulous!!! I only had to cook mine for about 22 minutes, and it was perfect. Use a meat thermometer to tell when chicken is done.
