Description

Use leftover cooked chicken to make an easy meal in your rice cooker.

Ingredients

  • 1 cup Basmati Rice
  • 1 cup Water
  • 1 cup Coconut Milk
  • 1 teaspoon Sugar
  • ½ teaspoons Salt
  • ¼ cups Frozen Peas
  • ½ cups Cooked Chicken
  • ¼ cups Roasted Peanuts, For Topping
  • ¼ cups Chopped Cilantro, For Topping

Preparation

1. Wash rice and put in the rice cooker. Add water, coconut milk, sugar, salt and peas.

2. Chop or shred leftover cooked chicken and put in the rice cooker with the rest of the ingredients.

3. Close the lid and turn on the rice cooker.

4. When the rice is done, stir it all up and top with the roasted peanuts and cilantro. Enjoy!

This was easy and fantastic! I only had plain old white rice, but it worked great. Highly, highly recommended.
