The crust of course is made out of crescent rolls (a whole lot quicker and simpler than making pie crust). And the pie filling is made up of all your classic lasagna ingredients minus the noodles. I almost put a layer of noodles in there, but then I thought it would be weird. And because there are no noodles in this recipe, I believe lasagna pie is even easier and quicker to throw together than a regular lasagna.

I grew so many beautiful cauliflower this spring I had to come up with some new ways to eat them. This was one of the best.

The definition of comfort food! A yummy casserole made of rotisserie chicken, brown rice, broccoli, and a from-scratch sauce. You won’t be able to stay out of it!

A great weeknight family meal. Easily assembled early in the day and bake when you’re ready to eat. This dish also freezes well.

I have to second this casserole! I wanted to post it as well.
This is my favorite casserole to take to families with brand new babies, or for funerals, etc.
The only differences in my version are: 1) add 1/4 C. chicken broth to soup/cream cheese mixture in saucepan and heat until cream cheese is mealted, then add chicken, 2) crush Ritz crackers in large baggie, add 2 T. poppy seeds and 2 t. black pepper, 3) just add pats of butter on top of crackers, if you don’t want to melt it beforehand.
Thanks for posting this Beagle!! I hope others find it to be as easy and tasty as we do!

Sorry for the addendum!
I made this once with a rotisserie chicken and while it was quicker, I was not as pleased with the outcome. I think it had to do with the dark meat (which I love, usually).
It wasn’t bad, just better with all white meat.

This is also a favorite of my family. We normally just omit the poppy seeds, though. It is absolutely delicious served on top of rice.

Dramaqueen – Never be sorry in my neck of the woods! Love the comments and the additional tips! It is always neat to see how other folks “do” recipes.
paigiepoo – I will have to try the rice idea…that sounds SO good.

My family LOVES this simple recipe. I usually make it without the poppy seeds. We like it with yellow rice and green beans on the side. Yum!
