Description

A quick and healthy Mexican inspired dish with loads of New Mexican red chiles.

Ingredients

  • FOR THE PEPPER SAUCE:
  • 15 whole Dried New Mexico Chiles (California, Anaheims)
  • 2 cloves Garlic
  • 1 cup Chicken Stock
  • 1 Tablespoon Ground Cumin
  • 2 Tablespoons Honey
  • 3 Tablespoons Rice Vinegar
  • ½ teaspoons Salt
  • FOR THE CHICKEN:
  • 2 pounds Chicken Cutlets
  • Salt And Pepper
  • 1 Tablespoon Oil
  • 1 Tablespoon Butter
  • Cilantro Leaves Or Queso Fresco, For Garnish

Preparation

Prepare a bowl of boiling hot water. Place the chiles in the water and allow them to soak for 10-15 minutes–until soft to the touch.

Remove the stems, seeds, and membranes, rinsing each pepper in the bowl. Then place in a food processor.

Add the garlic cloves and half the chicken stock. Puree until smooth.

Then add the cumin, honey, vinegar, salt and remaining stock. Puree again until smooth. Taste and salt again if needed. The sauce should have a very intense flavor, but not be overly spicy if the seeds and membranes are properly removed.

Heat a large skillet to medium-high heat. Pat the chicken cutlets dry and salt the pepper on both sides.

Add the oil and butter to the skillet. Once melted, place half the cutlets in the pan. Saute for 2-3 minutes per side. Repeat with the remaining cutlets.

To serve, warm the red pepper sauce and pour over the chicken. Garnish with cilantro leaves or queso fresco.

This dish was AMAZING!!! We also added lime juice (2 limes) to the sauce, and the flavors mixed beautifully. I made the sauce a day ahead, so it had a day in the fridge for the flavors to mix even more. The sauce definitely makes this dish, and would also be good with other dishes. Thanks so much for sharing this great recipe!!! We’ll put this on our “favorites” list!

I made this dish last night, but swapped chicken cutlets for boneless skinless chicken thighs. Super simple meal, easy and affordable! This sauce would be great over steak or a nice piece of fish! 4 thumbs up!

YUM! Super flavorful sauce! I will be trying different ways to prepare this. It’s worth noting my hubs added a couple teaspoons of lime juice to the finished product to balance out the flavor, it was a good move.

Made this sauce tonight and loved it! The Rice vinegar gave it a nice tang and took down the level of spice! Was great and will be making again in the future. Only note is to add the broth slowly to get the thickness you prefer.
