Description

Sweet and spicy, the perfect chicken recipe for a quick weeknight meal.

Ingredients

  • 3 Tablespoons Vegetable Oil
  • ½ cups Onion, Diced
  • 1 clove Garlic, Minced
  • 2 Tablespoons Fresh Ginger Chopped
  • 1 whole Celery Stalk, Minced
  • 1 whole Large Carrot, Chopped
  • 4 whole Cooked Chicken Breasts
  • 8 ounces, weight Crushed Pineapple In Juice
  • 1 cup Frozen Sugar Snap Peas
  • ½ cups Soy Sauce
  • 3 Tablespoons Honey
  • 1 Tablespoon Chili Powder
  • Salt And Pepper

Preparation

Heat oil in a large nonstick skillet over medium heat. Add the onion, garlic, ginger, celery, and carrot; stir. Let cook for 10 minutes. Add cooked chicken and combine. Add the crushed pineapple to the chicken mixture. Add sugar snap peas. Then add soy sauce, honey, chili powder, salt and pepper. Stir and let cook for 5-7 minutes. Serve over rice.

I have made this 3 times already, my husband just LOVES it! The flavors combine so perfectly!

I made this last week and it was delicious! I did make a couple of changes: I used powdered ginger (as I don’t have fresh on hand), I omitted the sugar snap peas and cut the chicken breast into bite sized pieces. Very easy and the leftovers made a great lunch for the next day.

I’m not sure where the honey part of this recipe was. Even after cutting back on the soy sauce and chili powder this dish was not what I expected. Everything was drenched in soy sauce. Sorry won’t be making this again for the family.

This was very good. I loved the flavor that the chili added to the dish. My (very picky) two year old loved it as well. Great leftovers. It’s a keeper.
